SPECIAL OF THE WEEK: R62 Pumpkin Gnocchi

Pumpkin and gnocchi pair perfectly for Fall. These hearty little dumplings are the ultimate comfort food. They’re colourful, tender and incredibly flavourful; especially when topped by a light butter and sage sauce.

Restaurant 62 Pumpkin Gnocchi
1 cup roasted pumpkin puree
2 lbs yukon potatoes (skin on)
3 yolks
1 1/2 cups sifted flour
1/4 tsp nutmeg
salt and pepper to taste
Method:
- Cover potatoes with cold salted water, bring to a boil and simmer until fork tender. Drain.
- When cool, enough to hangle, peel skins.
- Pass potatoes through a ricer into a large bowl.

What’s your earliest culinary memory?
My earliest memory is cooking with my mom when I was about 5 years old. We were making apple crumble from a kindergarten cookbook. I remember being fascinated by how the ingredients combined, and the incredible smells coming from the oven. To this day, apple crumble is one of my favourite desserts.
